Dinner couldn’t get easier than this bowl! It’s light, flavorful, and uses just a handful of ingredients!
SERVING SIZE: 2
2 cups shredded chicken, I used rotisserie
3 cups romaine lettuce, finely chopped
1/2 avocado, sliced
1/4 cup green onion, finely chopped
1/4 cup Caesar salad dressing
1.5 cups couscous, uncooked
Seasonings: salt and pepper, to taste
The recipe:
Cook the couscous according to the package instructions in a stockpot. Set aside.
In a skillet over medium heat, sauté the shredded chicken in a little olive oil with a dash of salt and pepper until heated through and crispy. Set aside.
Finely chop the romaine lettuce, green onion, and slice the avocado.
In each serving bowl, layer the couscous as the base. Arrange the crispy chicken, romaine lettuce, avocado slices, and green onion on top of the couscous.
Drizzle Caesar salad dressing over your assembled bowl! Enjoy! xx
