Grilled Corn Salad Bites

If you’re looking for an EASY yummy app to make this week- this fresh grilled corn salad is AMAZING🤍 it can be served in many ways- side dish/salad, a dip, or like I did as bites!! It’s simple to prep because you really just throw it all in a mixing bowl.

SERVING SIZE: 6

2 cups grilled corn

1 cup tomatoes, diced

1 cup black beans

1/2 cup red onion, diced

1 whole avocado, diced

1 cup diced mixed peppers, diced

1/2 cup feta

1/4 cup cilantro, finely chopped

1 full lime, squeezed

1/2 teaspoon chili powder

1 teaspoon salt (I used all season salt)

1/2 teaspoon garlic powder

1/2 teaspoon paprika

Tostitos scoops or a regular chip works too!

The recipe:

For the grilled corn, you can grill corn on the cob, then cut the kernels off the cob, or you can easily stove top sauté white corn for a few minutes (frozen or canned corn honestly work)!

When your corn is charred to your liking, set aside to allow to cool a little bit.

In a large bowl, combine the grilled corn kernels, diced tomatoes, black beans, red onion, diced avocado, mixed bell peppers, crumbled feta cheese, and finely chopped cilantro

Squeeze the lime juice over the salad. Sprinkle with chili powder, seasoned salt, garlic powder, and paprika. Toss gently to combine all ingredients and coat them evenly with the seasonings.

Spoon the salad into Tostitos scoops for individual bites, or serve alongside your favorite chips or as a side dish with your main course! Enjoy!! xx
