Creamy White Beans

This recipe is the easiest vegetarian-friendly soup and is so creamy and delicious! So easy to make and packed full of flavor! Give it a try and let me know what you think! It’s packed with protein and low-carb, perfect for your easy dinner or as a side!

SERVING SIZE: 2-3

1 can of white beans

3.5 cups broth of choice

2.5 cups spinach, finely chopped

1 tablespoon olive oil

1/2 cup grated Parmesan

Handful of basil, finely chopped

Seasonings: garlic powder, onion, powder, salt and pepper, to taste

The recipe:

Prep your veggies by finely chopping your spinach and basil.

Strain and rinse your beans then add to a pot with your broth of choice, finely chopped spinach, finely chopped basil, olive oil, grated Parmesan, garlic powder, onion powder, salt, and pepper.

Simmer on low to medium heat for about 45 minutes.

Serve with a sprinkle of grated parmesan and extra finely chopped basil, and enjoy!! xx
