If you’re looking to bring your lunch to work, school, or anywhere on the go, here’s one of my favorites because you can enjoy it cold!! Pesto, chickpea chicken orzo & arugula!!! So yummy, easy, nutritious and filling. ENJOY!
SERVING SIZE; 2 large mason jars
1 tablespoon pesto
1/2 tablespoon olive oil
1/3 of a lemon, squeezed
1/4 teaspoon pepper & garlic salt
1 cup chickpeas, (so 1/2 cup each jar)
1 1/4 cup rotisserie chicken, shredded
1 1/3 cup cooked orzo
1 whole zucchini, diced, sauteed & cooled
2 tablespoons pine nuts
3 cups packed arugula
1/2 cup grated parmesan or crumbled feta
The recipe:
Start by cooking the orzo according to the package instructions.
Meanwhile, dice the zucchinis into even-sized pieces and sauté them in a pan with a drizzle of olive oil, garlic salt, and pepper until they’re cooked to your liking.
Remove both the zucchinis and orzo from the heat and allow to cook before creating your meal prepped jars.
While waiting for the orzo and zucchini to cool, strain and rinse the chickpeas.
Now it’s time to assemble!
Begin by layering the sauce at the bottom of each jar with pesto, a drizzle of olive oil, lemon juice, and a sprinkle of garlic salt and pepper.
Next, add in the chickpeas, shredded rotisserie chicken, cooked and cooled orzo, and zucchini. Top with pine nuts and arugula, and finish with your choice of Parmesan or feta cheese.
Seal the jars with lids and store them in the fridge for a ready-to-go lunch option!
When you’re ready to enjoy your meal, simply pour the contents of the jar into a bowl & enjoy!! xx
