Loaded Crispy Chicken Hummus

This high-protein recipe is an amazing choice for a light and refreshing snack, appetizer, dinner, or topping. It pairs beautifully with pita chips or bread for a satisfying bite, or with crudités and romaine for a lighter option. For a heartier meal, enjoy it with rice and additional veggies to create a Mediterranean-inspired bowl. The possibilities are endless!

SERVING SIZE: 2-4

FOR THE CRISPY CHICKEN

2 cups rotisserie chicken, diced or shredded

Seasonings for chicken:

1/4 teaspoon pepper

1/4 teaspoon garlic powder

1/8 teaspoon all-seasoning salt

FOR THE HUMMUS:

Hummus, approximately 8-10 ounces or 1 tub of pre-made

1 tablespoon fresh dill, to garnish

2/3 cup tomatoes, diced

2/3 cup cucumbers, diced

1/2 cup crumbled feta

1/2 cup red onion, diced

1 tablespoon olive oil

1/8 teaspoon sea salt flakes, to top

To serve: Pita chips or bread, flatbread, crudite or lettuce, to dip or spread! (I personally used miniature Pita bread for easy bites!)

The recipe:

Prepare your rotisserie by dicing or shredding into small even-sized pieces.

With a drizzle of olive oil on medium heat, add your chicken to the pan aalong with your seasonings: pepper, garlic powder, and all-seasoning salt. Allow to crisp in the pan for about 3 minutes (or to your liking) till the edges are golden brown, and then toss & crisp another 2-3 minutes.

While your chicken is crisping up, prepare the rest of your ingredients by dicing your tomatoes, cucumbers, red onion, and whatever you choose to serve your hummus with!

Once your chicken is crispy, remove it from your heat and set aside!

Now it’s time to plate!

Spread the hummus evenly on a serving plate using a spoon or spatula. Top the hummus with the diced vegetables, then add the crispy chicken on top of the vegetables.

Sprinkle crumbled feta cheese over the chicken. Garnish with your fresh dill, a drizzle of olive oil, and a sprinkle of flaky sea salt!

Serve with your pairing of choice (Pita chips or bread, flatbread, crudite or lettuce, etc.) and enjoy! xx
